Add Fish For Flavor
Smear toasted whole-grain bread with whipped cream cheese and top with smoked salmon, sliced tomato, sliced red onion, and capers. (Why not make an extra one for lunch, too?)
Make Eggs a La Tomato Sauce
Simmer a few cups of your favorite tomato sauce in a skillet. Crack eggs directly into the sauce and swirl in the whites, while leaving the yolks untouched. Cook until the whites are firm and the yolk is set, but still runny. Top with lots of cracked black pepper and fresh parsley, if you like. Eat with crusty bread.
Serve Polenta with Toppers
Cook polenta or grits according to package instructions. Top with two poached or fried eggs, chopped scallions, salsa, and a bit of crumbled bacon.
Make Your Own McMuffin
Spread toasted English muffin halves with a spoonful of pesto. Top with scrambled eggs and shredded mozzarella cheese. Place under the broiler until the cheese melts and bubbles.
Add Spice to Eggs
Simmer half a can of black beans with a cup of chicken stock. Crack two eggs directly into the mixture and cook until the whites are set. Hit it with plenty of hot sauce.
Warm Up with Quinoa
Combine cooked quinoa in a pan with a half cup of milk, a pad of butter, golden raisins, a touch of brown sugar, and toasted walnuts. Heat until hot and creamy.
Bake Up a Gooey Treat
Add salsa and grated cheese to a small oven-safe bowl or ramekin. Crack two eggs over the top and bake in a 400 degree F oven until the whites are just set, about 10 to 12 minutes. Eat with whole-wheat toast or corn tortillas.
Go to Waffle Heaven
Toast two whole-grain waffles until crispy. Spread one with a thick layer of peanut butter, then top with sliced apples and ham. Top with the other waffle and eat it like a sandwich.
Sweeten Up Your Grains

Reinvent Nachos for Breakfast
Heat a cup of spicy, not-too-chunky salsa in a skillet. Add a few handfuls of tortilla chips and cook until slightly softened, but retaining pockets of crunchiness–about 90 seconds. Top with a fried egg, thinly sliced onion, crumbled cheese, and a squeeze of lime.
